Food for Thought – Edwina Napier



Happy birthday to my grandson Jonathan Weaver on February 18, Ezell Nevins on February 19, Melissa Roach on February 21, and Chris Hamilton and my grandson Jason Napier on February 23.

Golden Chicken and Noodles

6 boneless, skinless chicken-breast halves

two (10 3/4 oz.) cans broccoli-cheese soup

2 cups milk

1 small onion, chopped

1/2 to 1 teaspoon salt

1/2 to 1 teaspoon dried basil

1/8 teaspoon pepper

Place chicken pieces in slow cooker. Combine remaining ingredients. Pour over chicken. Cover. Cook on High for 1 hour. Reduce heat to low. Cook 5 to 6 hours. Serve over noodles.


Creamy Cooker Chicken

1 envelope dry onion soup mix

2 cups sour cream

one (10 3/4 oz.) can cream of mushroom soup

6 boneless, skinless chicken breast halves

Combine soup mix, sour cream and cream of mushroom soup in slow cooker. Add chicken, pushing it down so it is submerged in the sauce.

Cover. Cook on low for 8 hours. Serve over rice or noodles.
