Scotchies (Cookies)
1 cup flour
1/2 teaspoon soda
1/2 teaspoon salt
1/2 cup shortening
1 cup brown sugar
1 teaspoon vanilla extract
1 cup quick cooking oats
1/2 cup chopped pecans
1 cup shredded coconut
1 egg
Sift together flour, salt and soda. Cream shortening, beat in sugar gradually.
Add egg and vanilla and beat until light and fluffly. Stir in flour, oats, pecans and coconut.
Drop from teaspoon on greased cookie sheet. Flatten each cookie to 1/8 inch thickness with bottom of glass dipped in flour.
Bake at 325 degrees for 12 to 15 minutes. Remove from pan immediately. Makes 4 dozen cookies.

Vinegar Pie
1 cup sugar
2 heaping tablespoons flour
3 egg yolks
3 tablespoons vinegar
2 tablespoons butter
1 cup boiling water
pinch of salt
Mix all ingredients together. Cook until thick. Pour into baked pie crust. Make meringue with the 3 egg whites, 3 tablespoons sugar and put on pie. Brown in 325 degree oven.
