Applesauce Cake
2 teaspoons soda
1/2 cup boiling water
1/2 cup shortening
2 cups sugar
1 egg
1 1/2 cups sweetened chunky applesauce
2 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon allspice
1/2 cup raisins
1/2 cup chopped walnuts
Dissolve soda in boiling water, set aside. Cream shortening, sugar and egg in bowl until light and fluffy. Add applesauce, mix well. Add mixture of flour, salt and spices alternately with soda mixture, mixing well after each addition. Stir in raisins and walnuts. Spoon into greased and floured bundt pan.
Bake at 350 degrees for one hour or until cake tests done. Cool in pan.

Pumpkin Cake
7/8 cup oil
2 cups sugar
1 can pumpkin (15 oz.)
4 eggs
2 cups flour
2 teaspoons soda
1/2 teaspoon salt
2 teaspoons cinnamon
Combine all ingredients, beat well and pour into greased and floured tube pan. Bake at 350 degrees for 1 hour.
(It is good without frosting, but you can use cream cheese frosting on cooked cake.)
