Pumpkin Nut Bread
1 1/2 cups sifted flour
1 1/2 teaspoons soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup pumpkin, canned or fresh
1 cup sugar
1/2 cup buttermilk
1 egg
2 teaspoons soft butter
1/2 cup chopped pecans
Sift together flour, soda, salt, and spices. Combine pumpkin, sugar, buttermilk and egg in mixing bowl. Add dry ingredients and butter; beat until well blended. Stir in nuts. Spread in well-greased loaf pan.
Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean.

Plum Cake
1 cup oil
1 oz. red food coloring
1 teaspoon cinnamon
1/4 teaspoon salt
2 cups sugar
2 cups self-rising flour
1/2 teaspoon soda
3 eggs
2 small cans plum with tapioca baby food
1 cup chopped nuts
Mix all ingredients together and beat for three minutes. Bake in tube pan at 325 degrees for one hour and 15 minutes. (grease pan)
When cake is cool, frost with cream cheese frosting. Recipe as follows:
1 box powdered sugar
1 teaspoon vanilla extract
1/4 stick butter (room temperature)
one 8 oz, pkg. cream cheese (room temperature)
small amount of milk
This makes a beautiful red cake.
